Spiral Lasagna
All the deliciousness of lasagna, but with a bit of a more beautiful presentation.
Ingredients:
1 1lb package Italian sausage, casings removed
1 24 ounce can tomato sauce
1 package lasagna noodles
16 ounces ricotta cheese
1 egg
1 teaspoons oregano
3/ 4 teaspoon fresh ground black pepper
3/ 4 teaspoon salt
8 ounces shredded mozzarella cheese, or more as needed
How To:
Preheat oven to 400ºF. Prepare a 9x9 inch baking dish.
Heat a pan with a little oil and add the sausage. Sauté, breaking up into smaller pieces until cooked through.
Add tomato sauce and bring to a simmer. Season to taste and continue to simmer uncovered until reduced in volume by 1/4. Set aside.
Meanwhile, bring a pot of water to a boil. Par cook lasagna noodles until pliable enough to roll.
In a large mixing bowl, combine ricotta, oregano, salt, pepper and egg. Mix until fully combined.
Add a few spoonfuls of sauce to the baking dish (just enough to cover the bottom) and spread evenly.
Assemble the rolls. Place a noodle down on a work surface and add a tablespoon of ricotta cheese. Spread slightly and top with a tablespoon of sauce sprinkle with mozzarella cheese and roll crosswise to create a roll.
Place into baking dish with sauce spiral side up and repeat with remaining noodles and filling.
Spoon any remaining sauce over the rolls and top with remaining mozzarella. Pipe or spoon remaining ricotta filling into any empty spaces in the dish.
Cover with foil, and bake until bubbling and everything has come together (about 30 minutes).
